Arginine is an 'essential' amino acid for children in the growth phase, while for adults it is defined as 'conditionally' essential, since it can be synthesised by the body particularly in the kidney and liver. It is introduced from the diet through meat, dried fruit, and certain protein-rich plant foods (such as legumes), the importance of its functions being highlighted with those undergoing particular psychophysical stress, particularly restrictive diets, physical trauma, burns, major catabolic situations and convalescence.
